Hi I’m Daniel Carling, Junior Sous Chef at Eden Court. I’ve been a chef for about 9 years and I think the best way to describe myself is that I’m passionate about food.
As it’s World Vegan Day I wanted to tell everyone what we’ve been up to try to expand our vegan options on our menus. Veganism was probably seen as a bit of a fad five years ago, whereas now it feels like it has become a way of life for many people. More and more people are asking for vegan dishes which has spurred us on to think more about the dishes we are creating and preparing.
So now when we design our menu or create specials we’re always thinking about our vegan guests and how we can cater for them. When we were creating our new autumn/winter menu we wanted to make sure we expanded our options. On our lunch menu we have some great new vegan dishes but my favourite has got to be the vegan curry – it’s just perfect comfort food for a cold windy day.
